Playing the god of the sun and prophecy definitely seems like a scenario that is much more plausible than taking on the roles of Zeus or Poseidon. Considering he's a son of Zeus and therefore much younger than he and Poseidon, Apollo could be Lerman's best chance of returning to Percy Jackson as a new character. Since Lerman said he doesn't think he's old enough to play Poseidon, it seems unlikely the actor would be old enough to play Poseidon's brother Zeus, king of the gods, either.

While Hades, Ares, and Medusa have already been cast, major Greek gods such as Zeus, Poseidon, and Apollo have not. While many of the leading roles have already been cast, some big ones still have yet to be tied to an actor, leaving the door open for Lerman's possible return.
